A valentines Snack : )

I tried out this great new recipe that I wanted to share with you today.  Being super organised means that you start thinking early !! So Valentines thinking starts for me in January, thinking about what we are going to make, bake and do together starts early so we can enjoy the process  in the weeks before the day. So far I have ordered a few home decor bits, baked the below heart pillows, started our hand print valentines and bought some heart candies (for cupcakes). We love doing this sort of stuff together as it breaks the day up and makes it more exciting as we are doing different activities which is nice. I will  of course  be sharing all of the above crafts and cooking as they are complete so that you too can get a head start  on Valentines day if you wish :  ) Craft and baking just might not be your “thing” and that’s ok but in this house we love it, and doing an activity like this is my favourite part of our day.

Ingredients-

3 green shallots thinly sliced

100g pre cut bacon pieces (you get this from the deli counter)

250g chicken mince

3/4 cup frozen peas/corn

2 chicken stock cubes

1/2 cup cream

dash of soy sauce

4 sheets shortcrust pasrty

1 egg lightly whisked

1, Add shallots and bacon to a pan and cook for approx 3 minutes or until golden.

2. Add chicken mince and stir until cooked through.

3. Stir in cream, soy sauce, stock cubes and frozen veg. Put aside for 15 minutes or until cool.

4. Cut out your pastry into the desired shapes. Fill the shapes with mixture and then top with the remaining shapes. Use the whisked egg to seal the pastry and a fork to hold closed tightly.

5. Place on an oven proof dish in a 180 degree oven for about 15 minutes. Serve warm with tomato sauce.

(These are also great cold the next day Simon had them as a snack over the weekend cold and loved them)

Yummy!! Will definitely try these out this weekend :) And great tips on being organised for those special days, I usually get to the day and realise that I haven’t got anything planned. I’m definitely going to change that this year – thanks for the motivation!
