This was another new recipe I tried out the other day, I felt like I had fallen into a little cooking rut and was not trying new things !! Being a busy mum you tend to stick to the tried, true and easy recipes and so I really stretched myself the last few weeks to give the cookbooks a dust off and find some new and yummy recipes to try, photograph, eat and then of course share with you : )
Ingredients-
2 cups self raising flour
1/2 cup brown sugar
3 eggs
30g butter melted
1 cup milk
1 teaspoon vanilla extract
1 grated apple
Place flour and sugar in a bowl and make a well in the centre. Place the eggs, butter, milk and vanilla in the well and stir with a wooden spoon until combined. Add the grated apple mixture and stir through.
Allow the mixture to sit for 10-15 minutes.
Spoon 1/4 cupfuls of the mixture into a hot fry pan. Cook for 3-4 minutes or until bubbles appear the flip and continue cooking.
Keep in a sealed container for a few days. I added butter to mine to serve : ) Yum !! Oh and the cute heart plate? Spotlight : )
