I am sure you are like us and you are still working your way through your Easter chocolate stash in your house : ) If so this might be the recipe for you. We had a heaps of chocolate drops left over which I bought for home made chocolates and so we made a few muffins the other day and the recipe was really yummy so I thought I would share.
Ingredients-
2 cups flour
1/3 cup brown sugar
1/3 cup sugar
2 tsp baking powder
2/3 cup milk
2 eggs
125g butter melted
1 tsp vanilla essence
Chocolate chips/chunks or bits of easter egg whatever you have on hand.
1. In a large bowl mix together flour, sugars and baking powder.
2. In a separate bowl mix together milk, eggs, butter and vanilla.
3. Make a well in the centre of the dry ingredients and add milk mixture. Stir to combine and then add your chocolate.
4. Spoon in prepared muffin pans and bake at 200 degrees for about 15-20 minutes.
While you are waiting for the muffins to cook make sure you clean up your mess… or maybe create some more : )

And I added a cute little topper I found in the baking cupboard to my muffins, just for fun. Enjoy : )

Hi jade, can you tell me where you found the cupcake topper you used for your chocolate muffins? They are fantastic and just what I am looking for for a little boy’s 2nd birthday party. On that note are you able to share with us your ideas for birthday parties? I am sure flynn’s have been gorgeous!
