We have spent the last few months building up a little bulk stack of meals in our freezers ready for our newest arrival. I love the idea of not having to worry about healthy balanced dinners for my family for those first few crazy months and it saves on a lot of the food shopping as well.

Being winter we have done lots of casseroles, stews in the slow cooker, soups etc. On last weeks menu planner we had the following (all cooked in serves of 8-12 )
Beef and red wine casserole (shown above)
Chicken and Pumpkin Risotto
Spinach and Ricotta Cannelloni
Family sized Beef pies (2)
Lasagna (2)
Pumpkin Soup
All very winter style foods which we also find great to reheat. For dishes like the Pies, Lasagna and Cannelloni we freeze before the oven part of the recipe as we find they reheat best if defrosted during the day and then cooked in the oven. Now if only I didn’t keep on running out of containers and freezer space …

Not long to go now. You must be so excited to meet your little one.
I have just started cooking extra meals and freezing as after school activities means I don’t have that much time to cook.

A tip a friend gave me: make your lasagna (and cook it) Let it cool down, cut into pieces, wrap in foil and freeze.
Put wrapped parcel directly into oven (frozen) to heat!
Good thing is, if one person is away, or you want it for lunch, or you have visitors, you can adjust the serves easily.
We were doing it in cling wrap (because we were like you and running out of containers) but with foil it can go in oven (we were using microwave) and it gets crispy!!
