This was the first time I had used this recipe and I was really impressed with how easy and yummy these were! I had a few apples I needed to use before they turned and this is what I made-
Ingredients
2 cups self-raising flour
3/4 cup brown sugar
1tp cinnamon
160ml milk
4 tb canola oil
2 eggs whisked
2 ripe apples peeled and grated
1. Sift flour, sugar and cinnamon into a large bowl.
2. In a separate bowl combine the milk, oil and eggs.
3. Add the milk misture and apples to the flour mixture and mix until just combined.
4. Bake for 18-20 minutes until lightly golden in a 180 degree oven.
I froze mine for future use for lunches etc although I may or may not have eaten one, nice and warm out of the oven first : ).
