Easter egg cookies. I got this idea last year and we made these little cookies for our treat bags. The recipe is the same basic cookie recipe I always use (see this below) I just added a half solid egg to the top prior to baking. This is a great recipe to use for these cookies as they only have to bake for 10 minutes so you still get the egg shape even once they are baked in the oven.

Ingredients-
125g butter chopped at room temp
1/2 cup brown sugar
1/2 cup caster sugar
1 egg
1 tp vanilla extract
1 1/4 cups plain flour
1/4 cup self raising flour
1/2 tp bicarb soda
180g packet of choc chips/ smarties or M&Ms’s
Cream butter and sugars together in an electric mixer until light and fluffy.
Beat in egg and vanilla extract.
Sift in flour and bicarb soda.
Teaspoon mixture onto a baking tray and bake for 10 minutes in a moderate oven.
Make sure to look out for all of the cute little goodies bags around at the moment for Easter. It is always lovely to give and receive little gifts from your friends and family and even better when you can package them in cute bags : )

After easter, i sometimes make cookies with the leftover eggs, either break up the hollow ones, or chop the solid ones up, and make them into cookies.
It’s a good way of using up the last half of the jumbo egg that nobody wants to eat
I am baking these at the moment and they smell DELICIOUS.!
